Muffin Tin Scalloped Potatoes

Serves:

makes about 24 potato muffins

Ingredients:

5 lb bag of potatoes--any kind

Super Power Cashew Cream Sauce



Directions:

Wash and slice potatoes as thinly as possible using a food processor or mandolin. Layer potatoes in oiled muffin tins and pour enough cashew cream over to fill cup and cover potatoes.

Bake at 375 for 45 minutes.

Scrape sides with knife to release and cool.

Great for lunchboxess. Good hot or cold.
