Mitch Spinach Emoji Rice Balls
3 cups cooked brown rice
2 tablespoons unseasoned rice vinegar
1 teaspoon salt
3-4 sheets of Nori seaweed
3-4 ears canned baby corn, drained and cut into 1/2 inch thick pieces
1/2 avocado diced
(Substitute or add any other vegetables such as carrots, edamame, or cucumbers)
Make 3 cups cooked brown rice
Whisk together rice vinegar and salt in a bowl
Add to rice and mix with spatula until rice has absorbed vinegar mixture.
Spread on baking sheet and let cool for 5 minutes
Cut Nori into emoji shapes including eyes, noses, mouths, tongues etc. with thin scissors.
Place square of plastic wrap over a 1/2 cup ramekin or small bowl
Scoop 1/4 cup of rice into the center of the plastic wrap.
Press indentation into the center of the rice with your thumb and fill the hole with your cut baby corn, avocado or other favorite veggies.
Cover with small plug of rice and pull up sides of plastic wrap.
Twist and squeeze plastic wrap around rice to make tight, smooth ball of rice around filling.
Unwrap plastic wrap and transfer to plate.
Repeat with remaining ingredients.
Decorate with Nori using drops of water as glue
