Delicious Plant-Based Gravy

Ingredients:

¼ cup olive oil
1/3 cup diced carrot
1/3 cup diced celery
1 onion diced
1 bay leaf
¼ tsp dried thyme
¼ cup whole wheat pastry flour
5 black peppercorns
4 cups water
2 veggie no-salt bouillons
sea salt and pepper to taste



Directions:

Heat oil in saucepan and add vegetables until they begin to brown. Add flour and cook until it browns. Add thyme, peppercorns, bouillons, and water. Bring to a boil, then lower heat and let simmer for 30 minutes or so until thickened. Add salt and pepper to taste.
