The Happy Turkey (Meatless Turkey)


Tofu Loaf:
5 16-ounce packages of extra-firm tofu, drained
1 diced onion
1 1/3 cups diced celery
1 cup diced mushrooms
2 cloves minced garlic
2 heaping teaspoons of Italian Seasoning
¼ cup tamari
3 cups prepared stuffing mix 
½ cup avocado oil
2 tablespoons miso
5 tablespoons orange juice
1 teaspoon honey mustard
½ teaspoon orange zest


Tofu Loaf: Drain and crumble tofu. Place in a colander to drain further for at least three hours.Meanwhile, make Stuffing:In large frying pan or saucepan, sauté onion, celery, and mushrooms in one tablespoon of avocado oil.Add garlic, Italian Seasoning, salt and pepper to taste, and ¼ cup tamari. Stir and add water in small amounts until stuffing is moist and fluffy. Cover and remove from heat. Glaze: Simply whisk all ingredients together. Assemble tofu loaf: Press half of the tofu mixture into a bowl. Add stuffing and press down. Cover with remainder of tofu and press down. Invert onto oven safe platter or tray and press together. Baste with glaze, place a sprig of rosemary on top, and cover with foil. Bake at 400 degrees for one hour. Remove from oven, baste again, and cook, uncovered for another hour until golden brown and cracked. Cut and serve with heated gravy (See Gravy Video and Recipe)
