Kid-Friendly Cole Slaw


1 medium green cabbage, finely shredded
2 tablespoons finely grated carrot
1/4 cup minced fresh dill
1/2 cup dairy-free mayonnaise
3 tablespoons lemon juice
freshly ground pepper to taste (optional)
1/4 cup boiling water
salt to taste


1. Use the fine slicing blade to slice cabbage in food processor or by hand
2. Toss the shredded cabbage in a large bowl. Add the boiling water and salt, let cool and then knead cabbage with both hands for 1 to 2 minutes to break it down slightly. Drain.
3. Add carrot to bowl along with dill. Drizzle agave over mixture, then add mayonnaise and lemon juice. Toss well and season with pepper. Refrigerate for several hours if possible before serving.
