Magic Cheese Balls

Serves: 
8-10
Ingredients: 

1 pound firm tofu, drained and broken into big pieces
6 tablespoons nutritional yeast
4 tablespoons sesame tahini
4 tablespoons fresh lemon juice
3 tablespoons chickpea miso
2 teaspoons onion powder
3/4 teaspoons salt (optional)
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon dry mustard
1/2 - 1 cup sliced almonds

Directions: 

Cover tofu with water and simmer 5 minutes.
Drain well.
Chill until cool enough to handle.
Crumble in food processor and add remaining ingredients except almonds. Process into a smooth paste. Chill 2 hours. Spread almonds on a flat plate, roll mixture into small balls or one single ball, and roll over nuts to coat balls. Chill until ready to serve with crackers and cut vegetables.
