Mitch Spinach Black Bean Burgers


1 small onion coarsely chopped
1 red bell pepper, stemmed, seeded, and finely chopped
4 garlic cloves, minced
1/4 teaspoon ground cumin
1/4 teaspoon ground turmeric
2 tablespoons ketchup
1 1/2 cups cooked or canned black beans, drained and rinsed
1 cup cooked brown rice
2 cups fresh whole wheat breadcrumbs
1/2 teaspoon coarse salt
1/4 teaspoon freshly ground black pepper
Hot pepper sauce, ketchup, whole wheat buns, lettuce, tomatoes, avocados, for serving


In a medium skillet, saute onion, red pepper, and garlic in water . Cook, stirring frequently, until all the vegetables are soft and the onion is translucent, about 8 minutes. Add cumin, turmeric, and ketchup, and cook, stirring occasionally, about 1 minute more.

In a food processor, blend onion mixture, beans and rice until combined. Transfer mixture to a large bowl. Stir in breadcrumbs and add the salt and pepper and a splash of hot pepper sauce.

Form into small patties (kids love them this way) and place them on a baking sheet. Mist with olive oil and bake at 350 degrees for 20 minutes turning once. Serve mini patties on whole wheat rolls with desired toppings.
