Mitch Spinach Grilled Faux-mage

Makes 4 sandwiches

2/3 cup water
1/4 cup nutritional yeast flakes
2 tablespoons oat flour
2 tablespoons tahini
2 tablespoons freshly squeezed lemon juice
1 1/2 tablespoons ketchup
2 teaspoons cornstarch
1 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon ground turmeric
1/4 teaspoon dry mustard
1/8 teaspoon salt
8 slices whole grain bread
tomato slices optional


Combine the water, nutritional yeast flakes, oat four, tahini, lemon juice, ketchup, cornstarch, onion powder, garlic powder, turmeric, dry mustard and salt in a medium saucepan. Whisk until smooth. Bring to a boil, stirring constantly with the whisk. Reduce the heat to low and cook, stirring constantly, until the mixture is very thick and smooth. Remove from the heat. Place 4 of the bread slices on a flat surface. Cover one side of each slice evenly with the cooked mixture. Top with the remaining bread slices. Put it in a sandwich maker or panini press or lightly mist grill surface with canola oil and grill on both sides.  Brown each side carefully turning the sandwiches over once. Cut into your favorite shapes and serve immediately. Note: If your children or you like tomatoes, add the optional sliced tomatoes before grilling.  Enjoy!
