Old-Fashioned Baked Beans Surprise


1 tablespoon extra virgin olive oil
1 small yellow onion, minced
1 garlic clove, minced
1/2 teaspoon chili powder (1 teaspoon if you want it spicy)
Pinch cayenne (1/8 teaspoon if you want it spicy)
One 14.5-ounce BPA-free can of crushed tomatoes
1 tablespoon agave
2 tablespoons molasses
1 tablespoon yellow mustard
1 1/2 tablespoons tamari or other soy sauce
1 1/2 tablespoons white wine vinegar
3 cups cooked or two 15 ounce BPA-free cans of cannellini, great northern or butter beans, drained and rinsed
1 package meatless hot dogs
salt and freshly ground black pepper to taste


1. Preheat the oven to 350 degrees F. Heat the olive oli in a medium-sized saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Stir in the chili powder and cayenne. Add the crushed tomatoes, agave, molasses, mustard, tamari, and vinegar and bring to a boil. Reduce the heat to low and simmer until slightly reduced, about 15 minutes. Season with salt and pepper to taste.

2. Place the beans in a lightly oiled 1 1/2-quart baking dish. Add the sauce, stirring to combine. Slice and add the meatless hot dogs. Cover and bake until hot and bubbly, about 20 minutes.  Serve hot.
