Principal Lycopene's Bruschetta

Ingredients: 

8 garlic cloves
2 cups fresh basil
8 cups cherry or any tomatoes 
1/4 tsp freshly ground black pepper
3 tablespoons olive oil (optional)
2 tablespoons balsamic vinegar

Directions: 

Pulse garlic in food processor until minced. Add basil and tomatoes (cut in quarters if plum or whole if cherry/grape tomatoes). Pulse until roughly chopped. Strain mixture and add pepper, oil, and vinegar. Serve on whole grain toasts, seed crackers, etc.
