Super Power Cashew Cream Sauce (savory)

makes about 2 1/2 cups

2 1/4 cups veggie broth

1 cup raw cahsews

1 Tablespoon fresh lemon juice

pinch of salt if broth is unsalted

2 teaspoons onion powder

1/2 teaspoon dry mustard



Combine all ingredients in blender and process until smooth and heated. Can be heated over low heat to thicken even further.


Use in Muffin Tin Scalloped Potatoes!

Mix with canned tomatoes, spinach, and pasta for a yummy baked ziti!
