Sweet Potato Pie with Secret Walnuts


6 sweet potatoes

2 navel oranges, peeled and sectioned

1/4 cup orange juice

2 tablespoons date sugar

1 cup walnut halves

1 15-ounce can unsweetened pineapple rings, drained well


Bake sweet potatoes at 350 degrees for 1 hour or until soft. Remove skin and any browned areas. Blend oranges, juice, date sugar, and walnuts together in a blender or food processor and mix in the sweet potatoes. Spoon into a glass baking dish, place pineapple rings on top, and bake for another 10 minutes at 300 degrees.
